INGREDIENTS:
1 bunch of green garlic
3 tablespoons lemon juice
1/2 cup raw unsalted pistachios
1 (15oz) can cannellini beans, drained and rinsed (also known as white kidney beans)
pinch of salt
1/2 cup olive oil
PREPARATION:
In a food processor, process garlic scapes, lemon juice, pistachios, cannellini beans, and salt until processed to a rough purée.
With motor running, slowly drizzle olive oil through feed tube and process until fairly smooth.
Serve with your favorite dipping food (cracker, carrot sticks, etc.)
