Bacon-and-Apple Braised Cabbage

INGREDIENTS:

  • 2 chopped bacon slices

  • 1 teaspoon fennel seeds

  • 6 cups chopped red cabbage

  • 1/2 cup water

  • 2 cups chopped peeled Fuji apple

  • 3 tablespoons sherry vinegar

  • 2 teaspoons light brown sugar

  • 3/4 teaspoon black pepper

  • 1/8 teaspoon kosher salt

  • 1 1/2 teaspoons unsalted butter

PREPARATION:

  1. Cook 2 chopped bacon slices in a saucepan over medium 5 minutes.

  2. Add fennel seeds; cook 30 seconds.

  3. Add chopped red cabbage and water; bring to a boil.

  4. Cover, reduce heat, and simmer 20 minutes.

  5. Stir in Fuji apple, sherry vinegar, light brown sugar, black pepper, and kosher salt. Cover and simmer 5 minutes.

  6. Stir in unsalted butter.
